This recipe was served at our 2023 Wise Traditions conference. It is a variation of Sally Fallon Morell’s Summer Fruit Compote on page 579 of Nourishing Traditions, adapted by Yolanda Hawthorne. It yields 8 servings.
Ingredients for Mixed Berry Filling
- 6 cups mixed organic fruit berries (if using fresh berries cut size all the same so cooks evenly)
- 1 cup maple sugar/syrup
- 2 tsp freshly squeezed lemon juice
- 2 tsp arrowroot
Instructions for Mixed Berry Filling
- Heat oven to 375°F.
- Butter a 9×12 glass baking dish.
- Remove any seeds, stems from fruit, make sure it’s all bite-sized pieces.
- Toss fruit with natural sugar, lemon juice and any spices.
- If fruit is tart use more sugar.
- Transfer mixed berry filling to buttered baking dish.
Ingredients for the Crumble
- 1 cup almond meal [made with crispy almonds in a blender or food processor]
- ½ cup maple sugar (or you can use panela, Sucunat, or Rapadura)
- 1 ½ tsp arrowroot
- ½ tsp ground cinnamon
- ¼ tsp sea salt
- 8 tablespoons unsalted butter, room temperature
Instructions for the Crumble Topping
- Whisk almond meal, sugar of choice, cinnamon, arrowroot, and salt in a large bowl.
- Cut the butter into a few pieces and work into dry ingredients until large, heavy crumbs are formed.
- Scatter the crumble over the fruit mixture.
- Bake until the fruit juices are bubbling around the edges (30-35 mins).
Ingredients for Grand Marnier Sauce – Optional
- 12 tablespoons unsalted butter, room temperature cut into 8 pieces
- 1 cup freshly squeezed orange juice, strained
- 2 tablespoons maple sugar
- ½ orange zest, finely grated
- 1/3 cup Grand Marnier
Instructions for Grand Marnier Sauce – Optional
- Heat strained orange juice, sugar, zest over low heat, stirring often.
- Bring to a boil the sauce will thicken as it reduces, add the butter piece by piece, while simultaneously whisking.
- When completely blended, remove from the heat and stir in Grand Marnier.
- Drizzle over mixed berry crumble when it comes out of the oven.
- Finish with a dollop of fresh whipped cream or serve a la mode with your favorite ice cream.
