Ingredients
- 2 lb chicken feet
- Enough water to cover the feet
- Bay leaves
- Green and black pepper corns
- Baja Gold sea salt
Instructions
- I blanched 5 minutes, to get impurities out and lower uric acid.
- Then simmered with bay leaves, Baja Gold sea salt, green and black peppercorns for 3 hours.
- Chicken feet are from local farmers co-up, pastured, organic. It had no scum. Very clear and delicate tasting broth.
